Pull up a chair and join us at The Long Table—a farm-to-table dining experience where Chef Kaytie introduces unforgettable flavors and deep connection, bringing you to the place where timeless traditions meet. Inspired by the lifestyle practices of the world’s Blue Zones, each gathering is a celebration of both wellness, indulgence and longevity.

This dinner explores a side of Sardinia few people ever taste. There is no sunlit coast or seafood driven trattorias, but the remote, mountainous interior, where shepherd culture, longevity, and restraint quietly shaped one of the world’s most fascinating food traditions.

In these inland villages of Sardinia’s Blue Zone, the table looks very different from what we now associate with Mediterranean cooking. Seafood is scarce, olive oil is not the dominant fat instead animal fats from sheep and pork are used intentionally, and luxury is defined not by abundance, but by care, patience, and balance. This tasting dinner draws from that philosophy.

Throughout the evening, expect some courses built around vegetables and beans, treated with the same respect as any luxury ingredient. These are the foods that sustained generations of centenarians: humble in origin, powerful in effect.

The dairy rich shepherding culture means an abundance of milk, cheeses and animal fat to enrich these staples. Slow-cooked, deeply seasoned, and layered for texture and warmth. We will recreate inland Sardinia’s celebratory meals, such as culurgiones. A wheat ear shaped Pasta that represents fertility and gratitude, filled with potatoes, pecorino, and herbs.

Milk braised pork, offers tenderness and depth without heaviness, a beautiful milk whey jus, that pairs with the deep comforting flavors of braised white beans. Celebratory braised lamb with mountain herbs and myrtle, simply accents the grains, leeks and fennel it is served with. Dessert will be represented two ways, first by the more common practice of a finishing cheese course paired with seasonal fruits and nuts. Also a celebratory almond and chestnut cake with brown butter and citrus.

This is not coastal Sardinia. There is no abundance of fish, no olive oil forward bravado. Instead, the menu reflects a landlocked reality where preservation mattered, waste was unthinkable, and flavor was built slowly, through time, repetition, and respect for ingredients.

The result is a body and soul nourishing dinner that feels both ancient and luxurious.

The full menu will be revealed closer to the event. Traditional beverages will accompanying each course. A vegetarian option for each course will be available for pre-order. Seating is limited.

Menus will be revealed weekly, allowing each dinner to be guided by the finest ingredients available from local farms and trusted suppliers at their peak. Special guest collaborators will be announced for each event, offering added perspective through wellness, culture, storytelling, and craft—making every evening at The Long Table unique and memorable.
